Ingredients
- 1 lb boneless, skinless chicken breasts, cooked and shredded
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper, to taste
- 1 bag tortilla chips
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 jalapeño pepper, sliced (optional)
- 1 avocado, diced
- 1/2 cup diced tomato
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup salsa
Instructions
- Preheat oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, chili powder, cumin, salt, and pepper.
- In a large bowl, toss the cooked and shredded chicken with the spice mixture.
- Layer the tortilla chips on the bottom of a large baking dish.
- Sprinkle the chicken over the chips, followed by the cheddar cheese and Monterey Jack cheese.
- f desired, add sliced jalapeños on top.
- Bake for 10-12 minutes, or until the cheese is melted and bubbly.
- Remove from oven and top with diced avocado, diced tomato, chopped cilantro, sour cream, and salsa.
