Ingredients:Â
- 1 ½ - 2 cups pasta sauce (bottled or homemade)
- 30 jumbo shells
- 9 x 13 baking dish
- shredded mozzarella and parmesan cheese for topping
Filling:
- 2-3 Tbsp Olive oil
- 4 cups spinch (lightly packed)
- 1 small onion
- 2 eggs
- ½ cup shredded Parmesan cheese
- ½ cup mozzarella, shredded or diced
- 15 oz ricotta
- 1 tsp oregano
- 1 Tbsp basil
- 1 ½ cups shredded or diced roasted chicken
- salt and pepper to tasteÂ
Directions:
- Cook shells al dente, strain and set aside
- In a medium to large saucepan add olive oil
- Saute onions and then saute spinach. Set aside to cool
- In a large bowl add all filling ingredients and mix thoroughly including onions and spinach
- Spray the baking dish with cooking spray and add pasta sauce
- Fill each shell and place in the sauce
- Top with shredded cheese or fresh diced mozzarella
- In a 350 degree oven bake covered for 20 minutes
- Remove cover/foil and bake for another 20 minutes or until cheese melts and sauce is bubbly.
- Let cool for 10 minutes before serving
